Treats Don't Have To Be Unhealthy, They Can Be Good For You

With Easter fast approaching, we all know this usually means a lot of candy, jelly beans, marshmallow chicks and chocolate. Many times it also means a stomach ache the next morning. Why subject yourself to the sugar side effects, when there are delicious treats to eat that are actually good for you? 

Dark chocolate has antioxidant benefits, which help with cardiovascular health. Dark chocolate also works to aid diabetes protection and bone, dental and brain health. Cinnamon also has antioxidant benefits, helps reduce inflammation and fight bacteria. Coconut Oil is another fantastic ingredient, especially to use in place of other oils that become toxic at high heat temperatures. It also can help you burn more fat, kill harmful microorganisms and reduce hunger. Coconut oil has a myriad of health benefits. The following recipe uses all these ingredients.

I found these Healthy Easter Bunnies from The Happy Health Freak, Myra.  Myra currently lives in the Kootenays in beautiful British Columbia, Canada. After unhealthy eating habits and weight gain in her 20s, she decided it was time for a change. 

A few years later and 40lbs lost, she now lives (mostly) dairy-free, gluten-free, and dabbles with vegan, vegetarian, low-carb and keto foods.

Makes 24 bunnies (12 of each flavour)

Cranberry + Orange + Cinnamon
5 oz stevia chocolate (such as Lilly’s or Krisda)
1 Tbsp coconut oil
2 Tbsp dried cranberries, diced (no sugar added if possible!)
2-3 drops food grade orange oil or orange extract
1/2 tsp cinnamon

Melt the chocolate and coconut oil in a bain-marie or the microwave.

Stir in dried cranberries, orange oil and cinnamon.

Fill half (12) of the molds. Refrigerate.

Almond Joy
5 oz stevia chocolate (such as Lilly’s or Krisda)
1 Tbsp coconut oil
3 Tbsp coconut cream
2 Tbsp slivered almonds, chopped

Melt the chocolate and coconut oil in a bain-marie or the microwave. Fill half (12) of the molds HALF WAY. Refrigerate.

Fill molds with coconut cream, freeze for 5-10 minutes.

Pour remaining chocolate on top and sprinkle with almonds. Refrigerate until fully hardened.
